Healthy European knife from Rezekne municipality – foaming honey with elevated additives
In keeping with all the restrictions laid down in the Covic-19 period, on 18 July, a culinary masterpiece “healthy European food with Rēzekne municipality entrepreneurs” took place during the day OF the Rēzekne municipality of Rēzekne on 18 July. The honey was built in the honour - honey, combining it with modern technology - for lifolised additives, i.e. by drying, for example, in the cold of berries, thereby maintaining their natural taste and nutritional value. The honey was offered by the beekeeper of Rēzekne, Gunta Silkāne, who recently purchased the facility to deliver a new product to consumers - foam honey. In order to make the honey taste even more interesting, the Rēzekne Municipality Information Centre in Eastern Latgale cooperated with the Rēzekne Technology Academy Food Processing Laboratory, which combined the foam honey with lyophilised additives. The cooking process was shown in the culinary classroom, the tasting offered honey with cranberries. The participants of the event acknowledged that the new product had succeeded, it would like even those who did not taste honey. Similarly, the guests admitted that this type of product could become an interesting Souvenir from Rezekne municipality.
Similarly, a caramel on a tree and a batton made from hemp was added to the masterclass bench. It was offered by the farm “Obelisk Farm” from the decks.
The members of the culinary masters were actively debating honey with additives, as well as participating in the competition for the European Union. The Kaunatians and parish guests were strong enough, so the majority received the winners of the Europe Direct Information Centre in Eastern Latgale.
The Europe Direct Information Centre in Eastern Latgale is working for a long time with the Rēzekne Technology Academy, joint culinary masters are organized for a second year. Director of THE RTA first level vocational higher education programme “Processing of food products” M. soc.sc. Inese Silicka is satisfied with the cooperation between the municipality of Rezekne and THE RTA. Inese Silicka says: “RTA was implemented by Interreg V-A Latvia – Lithuanian programme“ Improving employment competencies in sales laboratories/SalesLabs ”. As part of this project, a new method of learning courses – a challenge-based learning – is introduced, where students deal with the challenges of entrepreneurs, which in turn solve one of the problems of this company, i.e. the development of new products/ideas. The idea of this project continues to materialise today. At the beginning of the year, a new co-operation of companies and students began, where, with student forces, entrepreneurs wanted to address some of the problems of their company. The students of the first level vocational higher education programmes“ production logistics ”and“ food processing ”chose to explore the SIA“ expands ”of Guntas Silkānes, which deals with the processing of beekeeping and beekeeping primary products and their sale. The research task was to develop new honey products. The raw material became a foam honey, supplemented by a variety of lyophilised vegetable raw materials or aromatic extracts.
The co-operation of the Europe Direct Information Centre in Eastern Latgale and the Rēzekne Technology Academy Food Laboratory will also continue on 12 September, when a culinary masterpiece “healthy European food along with the Rēzekne municipality's green buckwheat growers” will also be held within the transferred potdiers' days in Lūznavas Manor.
